Follow how food reaches the table by helping to harvest, prepare, and cook seasonal produce, then devour the results at Agriturismo La Manderà.
ABOUT ANNA & ANGELO
Lured by the charm of Rocca di Cave and united by a mutual passion for horse breeding, in 1998 we decided to leave the bustle of Rome behind and transform this farm into a thriving agriturismo. We’ve built a life here that’s connected to nature, finding joy in the smallest victories: a bountiful harvest, or the birth of a foal.

Walk through an ancient chestnut grove with a local producer and learn about the traditional practice of making mosciarella, smoked chestnuts.
ABOUT LORIS
I was raised in Capranica Prenestina, so the mosciarella has always been in my life. I fondly recall joining my grandparents and family in the chestnut harvest every October during my childhood. On our walk, I look forward to showing visitors a charming casette, the characteristic smokehouse structures being restored for use in the groves.

These fleur-de-lis-shaped cookies have been popular in Castel San Pietro Romano since the 17th century. Keep the tradition alive in the town’s family-run panificio.
ABOUT LAURA
My first days hand-kneading panpepati marked my destiny. I started working in the family bakery after middle school, and time flew by. The giglietti are our proudest achievement because we’ve turned what were once only made for special occasions into something precious for all occasions as a Slow Food. Making giglietti means remembering...this is our art and culture.

Enjoy a curated tasting with Matteo, who sources biodynamic wines from local producers with fewer than 20 hectares of land for his enoteca, Il Primo Passo.
ABOUT MATTEO
I opened my wine bar in the heart of Castel San Pietro Romano, after years of living and working in Central and South America, to unite the two things I love: travel and wine. Il Primo Passo, or “The First Step,” reflects my philosophy of always taking that first, brave step towards realizing one's dreams.

ABOUT THE RANCH
Inspiration for Agromnia Ranch Montagna Cavalli came from the plateau meadows around Guadagnolo. In addition to horseback riding, the Rufini and Bartoletti families’ vision includes the promotion of local gastronomy through products like beef, olive oil, chestnuts, chestnut pasta and beer and the creation of a network of horse trails linking the territory.

ABOUT FAUSTA & ANGELA
We grew up in Capranica Prenestina and spent our childhoods helping to support our families by making lane pelose and tending the mosciarella fire. Even though these things are no longer necessary for us to survive, we still help when there’s a need in the community, like with events such as the lane pelose heritage pasta classes and the mosciarella harvest.
